One of Europe's most historically layered cities — Roman, Moorish, Christian and colonial Spanish heritage in every street — centred on three UNESCO World Heritage Sites: the Cathedral, the Alcázar and the Archive of the Indies.
Three days lets you do justice to the Real Alcázar, the Cathedral and Giralda Tower, the exquisite Barrio Santa Cruz, the authentic flamenco and ceramics traditions of Triana, and the extraordinary Plaza de España. The pace in Seville is slower — dinners start at 10pm, tapas bars fill up at midnight — so arrive ready to adjust your rhythm.
Start at Seville Cathedral, the largest Gothic cathedral in the world, built on the site of the Great Mosque — inside is Columbus's tomb and the Giralda bell tower, climbed by ramp. Next door, the Real Alcázar is one of the finest examples of Mudéjar architecture anywhere, still an official royal residence. In the evening, get lost in Barrio Santa Cruz — whitewashed lanes, bougainvillea patios and a cold fino sherry with jamón.
Cross to Triana, birthplace of flamenco, for the Mercado de Triana and 500-year-old azulejo tile workshops. Walk back to El Arenal for a tapas crawl — salmorejo, pringá, gambas al ajillo, a free tapa with every beer. In the evening, return to Triana for an intimate flamenco tablao — Casa Anselma has no reservations, arrive at 11:30pm and join the queue.
Start at Plaza de España, built for the 1929 Exposition and featured in Star Wars and Lawrence of Arabia, then Parque María Luisa. Córdoba is 45 minutes by AVE train — the Mezquita-Catedral, a forest of 856 red-and-white arches with a Renaissance cathedral built inside it, is one of the most extraordinary buildings in the world. Alternatively, stay in Seville for the Museo de Bellas Artes (free for EU citizens) and La Macarena neighbourhood.
Metropol Parasol ("Las Setas") — the world's largest wooden structure, rooftop walkways at sunset. Bar Giralda — a tapas bar inside a genuine 12th-century Moorish bathhouse. Barrio Santa Cruz after 9pm — magical once the day-trippers leave. Archivo General de Indias — a UNESCO site with 80 million pages of original documents from Spain's Americas, almost always empty. Tablao El Arenal — one of Seville's oldest, most respected flamenco venues. Real Jardín Botánico — established 1807, free on Sundays, rarely crowded.
